Piri Piri Chicken - The Ultimate Go To Recipe!

Ingredients (Serves 2)

  • 2 tbsp Olive Oil

  • 1 tbsp Gabby & Kass Piri Piri Spice Blend (adjust for heat level)

  • 2 Chicken Breasts (boneless), or 2 Chicken Legs/Thighs, or 6-8 Chicken Wings

  • 1 Lemon

  • ½ bunch fresh Coriander, chopped


Instructions

  1. Prepare: Score the Chicken. For boneless breasts, pound to 1/2 inch thick.

  2. Marinate: Coat with Piri Piri spice and refrigerate (15 min to 2 hrs). Bring to room temp before cooking (30 mins cuts - 1 hr whole chicken).

  3. Cook: Choose a method.

    • Pan Fry - Heat 2 tbsp olive oil, cook on high heat for 6-8 min per side (breasts), 10-15 min (legs/thighs), 8-12 min (wings).

    • Grill - Preheat, oil the grate, and cook over high heat for 6-8 min per side (breasts), 10-15 min (legs/thighs), 8-12 min (wings). Keep lid off, turn once.

    • Bake - Preheat oven to 180°C (350°F) and cook for 30 min (breasts), 45 min (legs/thighs), 35 min (wings).

  4. Check: Internal temp should be 75°C (165°F) or cut to ensure juices run clear and chicken is not pink.

  5. Rest: Let sit under tented foil for 5-10 mins (cuts), 15-20 mins (whole chicken)

  6. Side Sauce: Melt 2 tbsp butter over medium heat for 1 min (pan or microwave), mix in 1 tbsp of Piri Piri spice, heat 1 more min until well mixed and serve in a bowl.

  7. Serve: Garnish chicken with fresh coriander, lemon juice, and enjoy!
