Prawns Piri Piri - Bold Heat, Big Flavour!

Prep Time - 30 min | Cook Time - 5 min | Total Time - 35 min

Ingredients (Serves 2)
2 tbsp Butter
3 tbsp Gabby & Kass Piri Piri Spice Blend (adjust for heat level)
3 tbsp Olive Oil
250g (1/2 Lb) Small Prawns or 500g (1 Lb) Large Prawns, cleaned & deveined (shells on)
1 Lemon
½ bunch fresh Parsley, chopped
Instructions
Prep Marinade: Melt 2 tbsp butter over medium heat for 1 min (pan or microwave), mix in 3 tbsp of Piri Piri spice, heat 1 more min until well mixed.
Marinate: Butterfly slice Prawns along spine, coat in marinade, refrigerate 15-30 min max. Bring to room temp for 30 min before cooking.
Cook: Choose a method.
Pan Fry: Heat 3 tbsp olive oil, cook prawns 4-5 min on medium heat, turning often. Cook in batches to avoid overcrowding.
Grill: Preheat, oil grate, grill prawns 4-5 min per side over medium heat, turning frequently.
Bake: Preheat oven to 180°C (350°F), cook prawns 10-15 min, flipping halfway.
Check: Prawns should be pink/orange & curled into a "C." Remove just before fully opaque as carryover cooking continues.
Side Sauce: Melt 2 tbsp butter over medium heat for 1 min (pan or microwave), mix in 1 tbsp of Piri Piri spice, heat 1 more min until well mixed and serve in a bowl.
Serve: Top with parsley, lemon juice, and enjoy!
